Let’s Share Some Recipes

Page 4 Recipes picAmerican fashion designer, philanthropist, and business executive Ralph Lauren is a man of many talents, it seems. He is as much at home in his Manhattan condo as he is at his sprawling rustic ranch in Colorado. His name isn’t often associated with a hamburger, but it turns out that he has one, which is served at his restaurant in New York City. (Again, who knew?).  Below is a recipe inspired by Lauren.

INGREDIENTS Special Sauce
½ cup mayonnaise
1/3 cup ketchup
2 tablespoons sweet relish
1 tablespoon finely chopped sweet gherkins
1 tablespoon finely chopped red onion
1 teaspoon Worcestershire sauce
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon hot sauce (based on taste)
Burgers 3 pounds ground beef chuck (preferably 20% fat)
Salt and pepper
8 ounces cheddar cheese iced red onion, and sliced pickles

Mix mayonnaise, ketchup, relish, gherkins, onion, Worcestershire sauce, garlic powder, onion powder, and hot sauce in a small bowl; season sauce with salt and pepper.

Do Ahead: Sauce can be made 2 days ahead. Cover and chill. Burgers Prepare grill for medium-high heat. Divide beef into 8 portions (about 6 oz. each). Working with one portion at a time, cup your hands around the meat and begin to gently shape it into a round patty, being careful not to pack the meat too tightly. Lightly press down on patty to flatten, then press a slight indentation into the center with your thumb to prevent patties from bulging when cooked. Generously season both sides of patties with salt and grill 5 minutes. Turn over patties, cover grill and cook until patties are medium-rare, about 5 minutes more. Transfer to a plate and let rest 5 minutes. Build burgers with buns, patties, bacon, cheese, lettuce, tomato, onion, pickles, and special sauce.

roasted sweet potatoesSweet potatoes are a well-known “super food’ because they are so good for you. They are high in vitamin B-6, vitamin A, carotene and potassium, rich in antioxidant vitamins C and E and a great source of manganese and dietary fiber. Sweet potato wedges are easy make and great to pair with (what else?), a bacon cheddar cheese burger with special sauce!

INGREDIENTS
3 large sweet potatoes
2 Tbsp extra-virgin olive oil
½ tsp salt and ½ tsp pepper

Slice the sweet potatoes in 10-14 wedges lengthwise. Transfer to a bowl and toss with olive oil, salt, and pepper. Roast in a 450 degree oven for 15 minutes, turn wedges, and roast for 15 more minutes. Serve immediately.
